Elegant Chicken Cutlets in Rum and Orange Sauce

Ingredients
- 1/3 cup flour
- Salt and pepper
- 4 boneless, skinless chicken breasts
- 3 tbsp. butter
- 1/3 cup amber rum
- 2 – 4 cloves garlic (to taste)
- ¾ cup orange juice
- Grated zest from one orange
- 1/3 cup whipping cream
- Orange slices

Preparation
Step 1
Season flour with salt and pepper
Slice chicken breasts in half and coat in the flour mixture
Melt butter over medium heat in non-stick skillet
Cook chicken for a few minutes on each side --- transfer to a plate & keep warm
Add rum and garlic to skillet, cook until rum is reduced to a glaze
Stir in orange juice, zest and whipping cream, bring to a boil
Return chicken to skillet, cook a couple of minutes until chicken is nicely coated in sauce
Transfer to serving plate, garnish with orange slices.
