This recipe is one that I have almost memorized because lately it has been requested so often! My children LOVE this recipe and ask me to make them from breakfast. I freeze the ones that I don't use. They make a tasty treat on a cold morning with a hot cup of tea!

Ingredients

  • 2 C unbleached all-purpose flour
  • 1/3 C plus 2 TBS. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 6 TBS. (3/4 stick) chilled unsalted butter, diced
  • 1 tsp. (packed) grated lemon peel
  • 3/4 C miniature semisweet chocolate chips
  • 3/4 C chilled buttermilk
  • 1 large egg yolk
  • 1 tsp. vanilla extract

Step 1

1. Sift 2 C flour, 1/3 C sugar, baking powder, baking soda and salt into large bowl. Cut butter and lemon peel with pastry cutter of in food processor. Mix in chocolate chips.
2. Whisk buttermilk, egg yolk, and vanilla in small bowl to blend. Add buttermilk mixture to dry mixture until dough comes together in moist clumps.
3. Gather dough into ball. (I knead the dough slightly to ensure it will stick together.)
4. At this point you can either roll it out and cut it with a biscuit cutter, roll the dough out to a circle and cut it in wedges or put the dough into a scone pan. I have done all three with great results.
5. Bake at 400 after brushing scones lightly with milk and sprinkling with remaining sugar for approximately 15-20 min. or until scones are golden brown.
