Turkey burger with figs

Ingredients
- 4 t evvo
- 1 t balsamic vinegar
- 1 t whole grain dijon
- 1 tsp agave nectar
- 1 tsp sea salt
- 1/4 tsp red pepper flakes
- 6 small figs sliced lengthwise
- 3 green onions (pale green and whites only)
- 1 t mint leaves
- 1/2 small yellow onion diced
- 16 oz ground turkey
- 1/4 large apple cored and diced
- 2 t chopped parsley
- 2 tsp thyme
- pepper

Preparation
Step 1
1) whisk together 2t evvo , vinegar, mustard, agave, 1/4 tsp of salt and red pepper. add figs, green onions and mint. toss gently and put aside
2) in skillet over md-low heat, add 1t oil. add yellow onion and sauté til soft, about 5 min. add to large bowl with turkey, apple, parsley, thyme, remaining salt and pepper. mix by hand til just combined. divide into 4 equal parts and shape.
3) large skillet over md, heat 1/2t oil. add 2 patties to skillet and cook 5-6 minutes then flip. after 2 minutes add cheese if you like., cover skillet and cook 1-2 minutes to melt cheese. repeat with remaining patties.
4) while burgers are cooking, toast buns if using them. to serve, place some greens on bottom of bun followed by a burger and a spoonful of fig mix
