Caesar Pork Tenderloin

Ingredients

  • 1 lb pork tenderloin
  • salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tsp lemon juice
  • 1 clove garlic, minced
  • 1 cup crushed crouton crumbs
  • 1/2 cup freshly grated Parmesan cheese

Preparation

Step 1

Heat the oven to 425F. Salt and pepper the tenderloin.

Combine mayonnaise, lemon juice and garlic. On a plate, combine crouton crumbs and Parmesan. With a knife, spread the mayonnaise mixture completely over the tenderloin and then roll in the crumbs to coat. Place on a flat baking sheet.

Bake for 15-20 minutes or until tenderloin is medium-well done. Cut into 1/4 inch thick slices to serve.
