Ingredients
- Banana mixture:
- 3 tablespoons Achiote Oil (made with achiote seeds and vegetable oil)
- 2 onions, diced
- 3 tablespoons minced garlic
- 3 lbs. pork belly, cut into small bite pieces
- Cilantro (chopped)
- Sazon Goya Seasoning (2 packets)
- Tomato Paste, 1 small can
- Tomato Sauce, 2 small cans
- Water, 2 cups
- Whole pitted olives, 2 cans, drained
- Mix the following and mash, mixing thoroughly, set aside
- Plantain Banana, 1 Large or 2 medium (peeled and grated)
- 3 tablespoons Achiote Oil
Preparation
Step 1
Press “sauté” and add 3 tablespoons achiote oil. Add onions and sauté until semi translucent (3-5 minutes). Add garlic and season with salt and pepper. Add in rest of ingredients except for olives and bananas. Saute for 5 minutes and stir few times so meat cooks evenly and ingredients mix well. Then, close lid, secure, make sure vent is closed, and press meat/stew for 40 minutes.
When pot beeps, QR and remove lid. Press “sauté” and add in banana mixture and olives. Stir stew occasionally. Cook for 5 minutes. Sprinkle with more cilantro and serve over rice.
