Bibb Lettuce & blue cheese salad with balsamic dressing

My favorite salad, a Todd English original. Dressing is great with any combination. I omit the onions for me and the walnuts on my boyfriends but still great.

Ingredients

  • 2 tablespoons walnut oil
  • 2/3 cup chopped walnuts
  • 2 tablespoons fresh lemon juice (about 1/2 lemon)
  • Splash balsamic vinegar
  • 2 heads Bibb lettuce, well washed, dried & torn into bite-size pieces
  • 1/4 white onion, very thinly sliced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shaved or crumbled Roquefort cheese or other blue cheese variety (about 2 1/2 oz)

Preparation

Step 1

Place small skillet over medium-high heat. When hot add oil and walnuts, cook until lightly toasted (about 3 minutes). Remove from heat as soon as toasted. Add lemon juice & Vinegar.

In large bowl mix lettuce, onions, salt & pepper. Divide among 4 plates and pour hot dressing over then. Sprinkle cheese over salad and serve immediately.

Tip: Freezing blue cheese for a minimum of 20 minutes will make grating it easier.
