Ingredients

    cup light brown sugar

  • 3/4

    cup white sugar

  • 1/2

    cup vegetable oil

  • 2

    eggs, lightly bean

  • 1

    cup pumpkin puree

  • 2 1/4

    cups flour

  • 1/2

    teaspoons salt

  • 2

    teaspoons baking powder

  • 1

    teaspoon nutmeg

  • 1 1/2

    teaspoons pumpkin pie spice

  • 1

    teaspoon vanilla

  • 1/4

    cup water

Directions

Preheat oven to 350, line a 9 x 5 loaf pan with parchment paper, leaving an overhang on 2 sides; coat well with cooking spray. Whisk pumpkin, vegetable oil, brown sugar, water, eggs, and vanilla together. In another bowl whisk flour, white sugar, baking powder, pumpkin pie spice, and salt together. Fold wet ingredients into dry ingredients. Pour into prepared pan, and bake 60-70 minutes or until a toothpick inserted in center comes out clean. Let cool 1 hour, then remove and transfer to a rack to cool completely.
