Caramelized Shrimp

Ingredients

  • Sauce:
  • 7 oz (200 g) shrimp with shells on
  • 1 tsp salt
  • 4 cloves garlic, minced
  • 1 tbsp minced ginger
  • 3 scallions, chopped coarsely
  • 2 cups oil
  • 1 tsp cornstarch
  • 2 tbsp soy sauce
  • 2 tsp sugar
  • 1 tbsp dry sherry
  • 1/4 tsp fivve-spice powder
  • 1 tbsp ketchup

Preparation

Step 1

Rub the shrimp with salt and let stand 10 minutes.
Meanwhile, prepare the sauce by combining all ingredients.
Heat 2 cups of oil in work until smoking.
Deep fry shrimp over high heat until almost done.
Drain.
Turn off the heat and remove all but 2 tbsp of oil.
Reheat wok and when the oil begins to smoke, saute the garlic and ginger until golden.
Return the shrimp and sauce mixture and fry until shrimp are evenly coated and caramelized.
