Lemon and Rosemary Madeira Cake

Ingredients

  • 6 oz butter
  • 6 oz sugar
  • 9 oz All Purpose flour, plus 2 good tsps baking powder and 1/2 good tsp salt
  • 3 eggs
  • juice and zest from 1 lemon
  • handful rosemary tips chopped finely

Step 1

Preheat oven to 350C

Grease and line a deep cake or loaf tin (9" round tin or small loaf tin)

Cream butter and sugar then beat in 1 egg at a time. Beat well then slowly fold in the flour adding the lemon juice so it keeps a firm consistency (should slowly dollop off a spoon) then add the lemon zest and rosemary.

Bake for 40 mins.

Add a tbsp milk.... that's what I did last time :)
