Pecan, Raisin, Cinnamon Rolls

Ingredients

  • Step 1 (To make Dough.)
  • 2 C. All Purpose Flour
  • 1 Packet Active Dry Yeast
  • 1 C. Milk
  • 1/4 C. Sugar
  • 1/4 C. Shortening
  • 1 t. Salt
  • 2 Eggs
  • 2 T. Melted Butter (for basting the top of the dough after you roll it out.)
  • Step 2 (To spread on top of Dough.)
  • 1/2 C. Sugar
  • 1 t. Ground Cinnamon
  • 1/2 C. Raisins
  • Step 3 (To place in bottom of Baking Dish.)
  • 2/3 C. Packed Brown Sugar
  • 1/4 C. Butter
  • 2 T. Light Corn Syrup
  • 1/2 C. Raisins
  • 1/2 C. Chopped Pecans

Step 1

Step 1: In large Bowl combine 2 cups Flour and the Yeast, set aside. Heat in saucepan, Milk, Sugar, Shortening, and Salt until warm or temperature on Candy Thermometer reaches 115 to 120 degrees. Add the Milk mixture to dry ingredients, then add Eggs. Beat at low speed with electric mixer for 1/2 minute, then scrape the sides of the bowl. Beat an additional 3 minutes on High Speed.
(At this time, remove from the mixer unless you have a mixer that has a large motor or you may burn your mixer up.)
By hand (or heavy duty mixer) combine 1 1/2 to 2 cups flour to make a moderately stiff dough. Pour onto a floured surface and begin to Knead the dough until smooth (8 to 10) minutes. Shape into a ball and place in greased bowl, turning over once, to grease both sides. Cover and let rise until double in bulk (about 45 to 60 minutes). Punch down; and divide in half. Cover and let rest for 10 minutes. Roll each half into a 12 x 8 inch rectangle. Brush each with melted Butter.

Step 2: Combine in a bowl, ingredients of Step 2 above, and spread on top of dough. At this point we will roll up the dough starting with the 8 inch side of the dough; seal the seams with a tiny bit of water. Slice each roll into 12 pieces.

Step 3: Blend all ingredients in a saucepan and heat just till the Butter melts and mixture is blended. Spray two 9 x 1 1/2 inch round Baking Dishes with cooking spray. Distribute mixture evenly into the 2 baking dishes and top with Pecans. Place rolls cut side down, in Baking Dish. Cover and let rise till double in bulk then place in preheated oven @ 375 degrees for 18 to 20 minutes or until golden brown. Cool about 1 minute then invert the rolls onto a Large Plate, remove baking dish.
