Ingredients

  • 2 cups flour
  • 1 1/2 cups sugar
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup butter
  • 1 cup milk
  • 1 tsp coconut flavoring extract
  • 4 egg whites
  • Rum Sauce
  • 1 cup sugar
  • 1/2 cup butter
  • 3 tablespoons water
  • 1/3 cup coconut rum or rum flavoring

Preparation

Step 1

heat oven to 350*
grease and flour 13X9 pan or 2 9 inches cake pans
bear flour, sugar, baking powder, salt, butter, milk and coconut flavoring in large mixer bowl on low speed for 30 seconds
scraping bowl constantly
beat on high speed 2 minutes
scraping bowl occasionally
add egg whites beat on high speed 2 minutes
scraping bowl occasionally
pour batter in pans
bake until wooden pick instated in center comes out clean
oblong 35-40 minutes
layers 30 to 35 minutes
DO NOT USE SELF RISING FLOUR IN THIS RECIPE

When cake is done let cool for 3 to 4 minutes
then pike hole in top of cake with cooking fork
pour sauce of you choice over hot cake
good warm or cool

sauce
in sauce pan ON LOW HEAT combine sugar, butter and water
cook until sugar is dissolved
remove from heat let cool then add coconut rum or flavoring
mix thoroughly
spoon over cake allowing it to absorb into cake
can top with 1 cup regular or toasted coconut
