Crock Pot Enchiladas

Ingredients

  • Substitution:
  • 1 pound ground beef or turkey, cooked
  • 1/2 cup chopped onion
  • 15 oz Kidney Beans, rinsed & drained
  • 15 oz Canned Tomatoes with green chilis
  • 6 oz Tomato Paste
  • 1 packages Enchilada Sauce Mix
  • 1 cup water
  • 8 oz Cheddar Cheese, shredded (2 cup)
  • 6 each tortilla, flour 6 inch
  • Can use 4 cups homemade enchilada sauce in place of tomatoes,tomato paste, water, and sauce mix
  • Low Carb version:
  • Double all ingredients except tortillas. This increases number of servings.

Preparation

Step 1

Fry beef with onion, drain. Add kidney beans, tomatoes, tomato paste, enchilada sauce mix, and water. Heat and stir.

Put 1/2 cup beef mixture in bottom of crock pot.
Repeat the following layers 6 times:
tortilla
3/4 cup beef mixture
cheese

Cook on low about 5 hours, or until heated through.

Serve with lettuce, tomato, guacamole, salsa, olives, sour cream.
