Ingredients

  • 2 1/4

    cup all-purpose flour

  • 2 1/2

    teaspoon baking powder

  • 1/2

    teaspoon salt

  • 1/2

    teaspoon ground cinnamon

  • 1/2

    teaspoon ground nutmeg

  • 2

    eggs

  • 1

    cup eggnog

  • 3/4

    cup sugar

  • 1/2

    cup butter, melted

  • 2

    teaspoon vanilla extract

  • 2

    teaspoon rum extract

Directions

In a large bowl, combine flour,baking powder, salt, cinnamon and nutmeg. In another bowl, beat eggs, eggnog, sugar, melted butter and extracts; stir into dry ingredients just until moistened. Pour into three greased 5 3/4 X 3 X 2 inch loaf pans. Bake at 350' for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.
