Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 3/4 cups Pureed Pumpkin (cooked)
  • 1 cup Brown Sugar
  • 2 Eggs
  • 1/2 cup Vegetable Oil
  • 1 1/4 cups Flour
  • 1 1/2 cups Whole Wheat Flour
  • 1 tablespoon Baking Powder
  • 2 teaspoons Cinnamon
  • 1 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Ground Ginger
  • 1 cup Dark Chocolate Chips
  • 1 cup Walnuts

Preparation

Step 1

Preheat oven to 400°F.
Mix the Pumpkin Puree, Brown Sugar, Eggs, and Oil until smooth. In a separate bowl, mix dry ingredients together. Add the dry ingredients to the Pumpkin mixture and stir to combine. Add Chocolate Chips and Walnuts and gently stir to combine.
Drop spoonfuls of the cookie dough onto a greased cookie sheet. Bake 10-12 minutes until golden brown.
Note: You can substitute Raisins for Chocolate Chips if desired.
