Ingredients
- 2 Fuyu persimmons, thinly sliced
- 6 oz. cooked chopped chicken
- 2/3 cup shredded radicchio
- 3 oz. diced Camembert cheese
- 8 6-inch whole wheat tortilla
- Olive oil spray

Preparation
Step 1
1. Mix persimmons, chicken, radicchio, and cheese.
2. Place one tortilla in skillet, spread with 1/4 chicken mix. Top with 2nd tortilla and lightly spray with olive oil. Cook on medium-high heat until golden, about 2 minutes; flip and cook second side.
3. Repeat for remanning 3 quesadillas.
