Chillaquillas

Ingredients

  • 12 corn tortillas
  • 1 bunch scallion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1 tablespoon oil
  • 1/2 teaspoon oregano
  • 1 teaspoon basil
  • 3/4 teaspoon salt
  • 2 cups tomatoes, chopped
  • 2 1/2 cups nonfat buttermilk
  • 3/4 cup lowfat cheddar cheese
  • 1/3 cup chopped green chiles

Preparation

Step 1

1. Cut tortillas up roughly.

2. Saute onion-cumin in oil. Add tortillas. Coat well. Remove from pan.

3. Add herbs-tomatoes to pan. Boil, simmer 5 mins.

4. Add tortillas, sauce, buttermilk-chilies, saving a bit of cheese to cover. Cover and cook until bubbly.

5. Set in 325 degree oven 20 mins., sprinkle with cheese.
