Ingredients

    cup chopped mango chutney

  • 2

    tablespoons fresh lime juice

  • 1/4

    teaspoon ground allspice

  • 1/8

    teaspoon cayenne

  • 3 to 4

    cups cooked brown rice

  • 1

    large mango, peeled, seeded, and cut into 1/2-inch pieces

  • 1

    red bell pepper, finely chopped

  • 1/2

    cup minced celery

  • 2

    tablespoons minced scallions

  • Butter lettuce (or other salad greens)

  • Slices of mango and red bell pepper (optional garnish)

Directions

In a bowl, combine the chutney, lime juice, allspice, and cayenne, and mix until well blended. Set aside. In a large bowl, combine the rice, mango, bell pepper, celery, and scallions. Add the reserved dressing, tossing to coat. Taste and adjust seasonings. To serve, line plates with equal amounts of lettuce, top with equal amounts of rice salad, and garnish with slices of mango and red bell peppers, if desired.
