Ingredients

  • cooking spray
  • 1 tsp cornmeal (fine ground)
  • 1 lb whole wheat pizza dough
  • 4 medium firm ripe bananas, sliced 1/4 inch thick
  • 2 c fresh raspberries
  • 2 Tbsp unsalted walnut pieces, toasted
  • BROWNIE TOPPING
  • 2 medium ripe bananas, mashed
  • 1/4 c unsalted almond butter
  • 1/4 c unsweetened cocoa powder
  • 2 Tbsp maple sugar flakes, finely ground
  • 2 Tbsp whole wheat flour
  • 1 tsp baking powder
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/8 tsp cayenne pepper
  • pinch sea salt
  • 1/2 c melted dark chocolate (70% or greater)
  • 4 egg whites, divided
  • CREAM CHEESE ICING
  • 1/2 c low fat plain cream cheese
  • 1 tsp pure vanilla extract
  • 1 Tbsp maple sugar flakes, finely ground

Preparation

Step 1

1. preheat oven to 475

2. Lightly mist a pizza pan (12" perforated) with cooking spray and dust with cornmeal. Roll out dough into a 12-14" circle and transfer it to the pizza pan.

3. Prepare brownie topping. Using an electric mixer or food processor combine 2 bananas, almond butter, cocoa powder, maple sugar flakes, flour, baking powder, vanilla, cinnamon, cayenne, and salt until smooth. Add chocolate and mix until well combined. Pour mixture into a medium bowl.

4. In a separate bowl, whisk 3 egg whites (1/3c) until foamy. Using a spatula, gently fold egg whites into banana mixture. Mixture will be runny.

5. Brush remaining 1 egg white around 1 inch edge of dough in toward the center and pinch, egg white helping to adhere. Continue this motion all the way around to make a rolled edge to hold in the brownie topping.

6. Pour brownie topping onto center of pizza dough and spread evenly to the rolled edge. Bake pizza for 12-14 minutes or until crust is golden crown and toothpick inserted in center or brownie mixture comes clean.

7. Prepare cream cheese icing in a small bowl, mix together cream cheese, vanilla, and maple sugar flakes until flakes dissolve completely. Transfer mixture to a small ziploc bag. Gently squeeze icing into bottom.

8. remove pizza from oven and top evenly with 4 banana slices, raspberries, and walnuts. With scissors, cut a small hole in the corner of the ziploc bag and pipe icing onto pizza in a zig zag pattern. Slice pizza into 16 pieces and serve immediately.
