Hollandaise Sauce

Ingredients

  • 1/2 Cup Butter
  • 2 Egg yolks beaten
  • 1/4 tsp salt
  • 1 Tbsp lemon juice

Preparation

Step 1

Melt Butter in top of double boiler. Slowly add a small amount of butter to eggs. Then add the eggs to butter & return to double boiler. Stirring constantly with whips until thickened. Remove add salt and lemon juice.
Sauce needs to stand over the water, Covered to keep it hot, for 30/45 minutes while you prepare eggs, bacon, ham ect.
If it separates, while standing, add hot water (not boiling) drop by drop, add until it mixes again
