Ingredients
- 1 egg beater
- 1 cup grated coconut
- 1 cup sugar
- 1 tlb. flour
- 2 cups fresh pineapple
Preparation
Step 1
1. In large mixing bowl combine egg, coconut, sugar and flour, stir in pineapple.
2. Pour into pie crust
3. Cut slits of top pie crust and place on top sealing at edge.
Bake at 400 for 35-40 min until golden brown & bubbly.
Cool.
OPTIONAL
- 1 large banana slices & 1/2 tsp orange extract may be added with pineapple.
