Ingredients

  • 10 strips of center cut bacon, chopped 1/4 inch
  • 2 lb. of lean ground beef
  • 1 large yellow pepper, seeded and chopped
  • 1 large red onion, peeled and chopped
  • 4 jalapeno peppers, seeded and chopped finely
  • 1 tsp. minced garlic
  • 1 12 oz. bottle of malt beverage
  • 1 tsp. beef bouillon
  • 1/2 TLB of salt
  • 2 TLB. of light brown sugar
  • 1 1/2 TLB of chili powder
  • 1/2 TLB tabasco sauce
  • 1 1/2 tsp. Worcestershire sauce
  • 1 15.5 oz. can of red kidney beans, drained
  • 1 15.5 oz. can of back beans, drained
  • 2 14.5 oz cans of tomato sauce

Preparation

Step 1

Drop bacon and ground beef into a hot 5 quart pot (high heat) and stir constantly until browned. Do not drain. Add yellow pepper, red onion, jalapeno pepper and garlic. Stir until yellow pepper wilts and onion is translucent. Add malt beverage. Immediately stir in bouillon, salt, brown sugar, chili powder, tabasco, and Worcestershire sauce; stir and boil for 5 minutes. Reduce heat to simmer and add kidney beans, black beans and tomato sauce. Simmer for 1 1/2 hours, stirring every 15-20 minutes. Garnish with shredded cheddar and Monterey Jack cheese, sour cream and scallions.
