Hot cauliflower and cheese dip

  • 2 cups cauliflower pieces
  • 5 oz medium cheddar, grated and divided in 2 (or substitute Gouda or Havarti)
  • 1 tsp. cornstarch
  • pinch dried oregano, paprika, garlic powder
  • salt and pepper



Step 1

In a pot, bring water to a boil over high heat. Add cauliflower and cook 10 mins. Drain, reserving 1/2 cup of liquid. Preheat oven to broil. Puree cauliflower using reserved liquid, half the cheese and cornstarch (diluted in a bit of water).
Add herbs and season with salt and pepper. Pour into an oven-safe dish, sprinkle remaining cheese on top and brown in oven.

Serve with crudites, sliced baguette or vegetable chips.
