Easy Pumpkin Mousse-THM

I found this in some THM comments on facebook. I made some changes to the recipe for better flavor.

Ingredients

  • KC added:
  • 2-3 cups cooked pumpkin (or sweet potato)
  • 1 can coconut milk
  • 1/3 cup cacao (baking cocoa)
  • 1/2 - 1 tsp gluccaminin powder if desired (to make mousse thick for a pie you must add gluccie)
  • 1-2 tsp cinnamin
  • 1/8 tsp each cloves, nutmeg, ginger
  • 1 tsp vanilla
  • 1/4 cup maple syrup (or use stevia for THM)
  • Make a nut base if you want a pie:
  • 1-2 cups almond/nut flour/meal
  • 2-4 Tbsp butter/ghee/coconut oil, melted

Preparation

Step 1

To make mousse blend all ingredients, I suggest using vitamix. Blend longer for extra thickening from the gluccie.

To make pie mix and press crust ingredients into pan and pour the mousse in.

Chill in Fridge.
