Chicken with Sun-Dried Tomato Cream Sauce

For a quick and satisfying after-work supper, team this tasty chicken dish with some cooked noodles that have been tossed with olive oil and freshly grated Parmesan cheese.


Ingredients

  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 skinless boneless chicken breast halves, cut crosswise into 1/2-inch strips
  • All purpose flour
  • 2 shallots, minced (about 1/4 cup)
  • 2/3 cup whipping cream
  • 1/2 cup dry white wine
  • 1/3 cup (generous) chopped drained oil-packed sun-dried tomatoes
  • 3 tablespoons chopped fresh basil or 2 teaspoons dried

Preparation

Step 1

Melt butter with olive oil in heavy large skillet over medium-high heat. Season chicken with salt and pepper. Dust chicken with flour; shake off excess. Add chicken to skillet and sauté until light brown and just cooked through, about 3 minutes. Using slotted spoon, transfer chicken to plate.

Add minced shallots to skillet; sauté 1 minute. Add whipping cream, white wine, chopped sun-dried tomatoes and basil. Bring to boil; cook until sauce thickens, stirring occasionally, about 4 minutes. Return chicken to pan; cook until just heated through, about 2 minutes. Season to taste with salt and pepper and serve.

I'm writing another review since this recipe is so good. I made it again and guests just loved it. I want to add to pound the chicken before slicing into pieces. Of course, use more (double or triple) sun-dried tomatoes, sauteed mushrooms, a clove of minced sauteed garlic. Don't forget to deglaze the pan before adding cream. You will love this recipe!

This was absolutely delicious and our guests raved about it. Deglazing the pan with white wine before adding cream is an absolute must. I also added sauteed mushrooms and a minced clove of sauteed garlic to the sauce.

I made this again last night for the third time and wanted to add a new note. Instead of using sun dried tomatoes packed in olive oil, I found hydrated ready to use sun dried tomatoes not packed in any oil and frankly it was even better with lots of flavor. I also used penne pasta for the first time and found it a fabulous accompaniment, more than the fettuccini. Again, I HIGHLY recommend tripling the sauce recipe. I also topped with freshly grated Parmesan. You won't be disappointed! Oops, sorry, I keep forgetting to add other hints. Like another reviewer said...deglaze the pan with the wine first before adding the cream. All those stuck on bits of chicken will release itself and makes for an incredible sauce.

I read all the reviews and took the following suggestions. Tripled the recipe and served over a bed of fettuccini. Cubed the chicken for easy eating rather than left in strips. I added some garlic as well. Very simple and well loved by my family and boyfriend. I've made it twice and will make it again tonight.

This is a standard recipe in our house, we make it probably every other week. I usually just use onions since that's what's on hand. It really is very fast and seriously good!

This was delicious and easy. i will definitely make it again. fresh basil is a must! i decreased the butter to 1 tbsp. i am going to decrease the fat content further by using milk instead of cream and thicken sauce with cornstarch if necessary. also will use sun-dried tomatoes not packed in oil. Gotta trim it where you can!

Excellent quick recipe. My only suggestion is to deglaze the skillet with the wine, scraping up all the good stuff, then add the cream and tomatoes.

A quick and easy recipe that we enjoyed. I used half and half instead of cream. I also used less dried basil. It was a lot!

This is a very good dish, and the beauty of it is it's simplicity. The sun-dried tomatoes that I had on hand were not packed in oil, but this didn't seem to hinder the outcome.served with seasoned brown rice and a salad. There were no leftovers!

This is one of my stand-by recipes. I sprinkle chicken with garlic powder and saute with garlic. This is GREAT!
