Cajun Beef and Rice

Ingredients

  • 1 lb. extra lean ground beef
  • 3 celery ribs, chopped
  • 1 green pepper, chopped
  • 1 sweet red pepper, chopped
  • 1/4 c. chopped onion
  • 2 c. water
  • 1 c. instant brown rice
  • 1 T. minced fresh parsley
  • 1 T. Worcestershire sauce
  • 2 Tsp. beef bouillon granules
  • 1 tsp. Cajun Seasoning
  • 1/4 tsp. crushed red pepper flakes
  • 1/4 tsp. pepper
  • 1/8 tsp. garlic powder

Preparation

Step 1

In a large skillet, cook beef, celery, green and red peppers, and onion over medium heat 8-10 minutes or until beef is no longer pink, breaking up beef into crumbles; drain.

Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, covered, 12-15 minutes or until rice is tender.


NOTE: Instead of instant brown rice, I want to try the Trader Joes pre-cooked brown rice, OR get regular brown rice, cook it separately, and then add it to the skillet near the end of the cooking time (which could be reduced to about 5 minutes, since it's mainly to soften the instant brown rice).
