HAM*****Ham Steak with Kale & Black Eyed Peas

22/11/14 - Great for both. The kale and bean salad, with the tangy mustard vinaigrette is a perfect foil for the ham. Dan loved both.

Ingredients

  • 8 ounce Ham Steak, diced bite-sized (buy Grandpa ham at the deli if you can get it, it's double smoked)
  • 1 tablespoon Cider Vinegar
  • 2 teaspoons Dijon Mustard (or more to taste)
  • 1 Clove Garlic, pressed or grated
  • 2 tablespoons Olive Oil
  • 2 cups Kale Leaves (Finely Chiffonade)
  • 1 2/3 cups canned black eyed peas (Drained & Rinsed)
  • 1/4 Red Onion, thinly sliced
  • Kosher Salt and Freshly Ground Black Pepper
  • 2 tablespoons whipping cream
  • 1 tablespoon maple syrup

Preparation

Step 1

In a jar, whisk together the vinegar, mustard, garlic, salt, pepper and olive oil then set aside.

Cube ham steak into bite-sized pieces and blot dry on paper towels if wet. Grind a bit of black pepper over.

Preheat a medium non-stick sauté pan over medium high heat. When the pan is really hot, add a drizzle of oil followed by the ham. Cook for 2-3 minutes per side until golden brown and slightly charred. Just before serving, add the remaining vinaigrette to the pan then add the cream and maple syrup and stir for a minute to create the sauce then remove from the heat.

Meanwhile, massage the Kale with a drizzle of olive oil and a sprinkle of salt, for about 2 minutes, breaking down the leaves and wilting them slightly. Next add the peas and onion. Dress with some of the Vinaigrette. Mix well and season to taste, adding croutons, if desired

Serve the Ham Steaks with the Kale Salad on the side.
