Ingredients
- 2 TBS olive oil
- 2 lbs. stew meat
- 4 tsp garlic
- 2 onions, diced
- 2 pepers, diced
- 1 TBS adobo
- 3 cans of beans, drained
- 2 TBS chili powder
- 1 TBS cumin
- 2 - 28oz cans od crushed tomato
- 2 - 8 oz cans of tomato sauce
- hot sauce
- cheese, scallions and cilantro for top
Preparation
Step 1
Preheat large pot. Add oil and brown meat. Cover and simmer for about an hour, or until most of liquid is gone. Add garlic and vegetables and cook until tender. Add adobo, chili powder and cumin, stir to coat. Add tomatoes, tomaot sauce and hot sauce. Simmer two hours. Stir in beans and cook for 30 minutes.
