Pumpkin Oatmeal breakfast bars

  • Serves: 6 servings
  • Ingredients
  • 1 1/2 c. whole rolled oats (certified gluten free if needed for an allergy)
  • 1/2 c. nuts (pecan and walnuts are both excellent!)
  • 1 tsp. vanilla
  • 1 c. pumpkin puree
  • 1 egg
  • 1 very ripe banana
  • 2 Tbs. maple syrup or honey
  • Instructions


Preparation time 5mins
Cooking time 20mins


Step 1

Use a fork to mash the banana into a smooth paste in a medium size mixing bowl.
Add the vanilla, pumpkin , egg and maple syrup or honey and stir until smooth.
Add the oats and nuts and stir just until combined.
Pour into a well greased 8x8 baking dish or pie plate. Use a rubber spatula to smooth the batter out to the edges of the pan.
Bake at 300 degrees for about 15 min.
