Pumpkin Oatmeal breakfast bars
Make the night before for a fast breakfast!
- Serves: 6 servings
- 1 1/2 c. whole rolled oats (certified gluten free if needed for an allergy)
- 1/2 c. nuts (pecan and walnuts are both excellent!)
- 1 tsp. vanilla
- 1 c. pumpkin puree
- 1 egg
- 1 very ripe banana
- 2 Tbs. maple syrup or honey
Preparation time 5mins
Cooking time 20mins
Use a fork to mash the banana into a smooth paste in a medium size mixing bowl.
Add the vanilla, pumpkin , egg and maple syrup or honey and stir until smooth.
Add the oats and nuts and stir just until combined.
Pour into a well greased 8x8 baking dish or pie plate. Use a rubber spatula to smooth the batter out to the edges of the pan.
Bake at 300 degrees for about 15 min.
