Garlic Mashed Cauliflower ("Mock" Mashed Potatoes)

Ingredients

  • 1 med head cauliflower
  • 1 T cream cheese, softened or 1 T nonfat Greek yogart
  • 1/4 c grated Parmesan cheese
  • 1/2 t minced garlic (or more to taste)
  • 1/8 c (or less for desired thickness) chicken broth
  • 1/8 t fresh ground pepper
  • 1/2 t chopped fresh or dry chives, for garnish
  • 3 T unsalted butter

Preparation

Step 1

Set a stockpot of water to boil over high heat. Clean & cut cauliflower into sm pieces. Cook in boiling water for 6 min until well done. (Or steam cauliflower for 30 min in steamer.). Drain well; do not let cool & pat cooked cauliflower very dry between several layers of paper towels.

In bowl with an immersion blender or in food processor, purée hot cauliflower with cream cheese, Parmesean, garlic, chicken broth & pepper until almost smooth. (Can add a little fresh rosemary if desired.)

Garnish with chives & serve hot with pats of butter.
