Ingredients

  • 1 cup - Domino® Granulated Sugar
  • 1/3 cup - shortening
  • 1 - egg
  • 1 teaspoon - vanilla
  • 2 1/4 cups - all-purpose flour
  • 1 teaspoon - cinnamon
  • 1/2 teaspoon - baking powder
  • 1/2 teaspoon - baking soda
  • 1/2 teaspoon - salt
  • 1 cup - canned pumpkin
  • 1/2 cup - golden raisins
  • 1/2 cup - chopped nuts
  • 1 - (11 oz) pkg. butterscotch-flavored chips
  • Cream Cheese Frosting (below)

Preparation

Step 1

Preheat oven to 350°F. Grease cookie sheets.

Beat sugar and shortening in large bowl until fluffy. Add egg and vanilla; mix well. Stir together flour, cinnamon, baking powder, baking soda and salt in small bowl; gradually add to sugar mixture alternately with pumpkin; beat until mixed. Stir in raisins, nuts and butterscotch chips.

Drop by rounded teaspoonfuls onto prepared cookie sheets. Bake 15-18 minutes. Remove to cooling racks. Cool. Frost with Cream Cheese Frosting.

Cream Cheese Frosting: Mix 2 cups Domino® Confectioners Sugar, 3 tablespoons softened cream cheese, 2 tablespoons softened butter or margarine, 3 tablespoons milk and 1 teaspoon vanilla in small bowl until smooth.
