Cranberry Bread

Ingredients

  • 1 orange (juice and rind)
  • 1 tablespoon melted butter
  • 1 well-beaten egg
  • 1 teaspoon salt
  • 1 cup nuts
  • 2 cups flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon soda
  • 1 cup halved cranberries

Preparation

Step 1

Grind the whole orange, place in large mixing bowl. Melt butter and add enough cold water to make ½ cup. Add to orange in mixing bowl – add egg. Sift together the flour, sugar, soda, baking powder and salt. Add to liquid ingredients in mixing bowl. Stir well. Add nuts and halved cranberries. Bake in well-greased loaf pan.

Bake 60-70 minutes --- 350 degree oven

(Louise's note: This recipe makes 1 large loaf or two small loaves. I always double it to make 4 small loaves.)
