Baked Potato Casserole

I usually cut back on the ingredients to make a smaller pan unless making for a party.

Ingredients
- 5 lb potatoes, cooked and cubed
- 1 lb bacon, cooked an crumbled
- 4 c cubed velvetta
- 4 c shredded cheddar
- 1 onion, finely chopped
- 1 c mayo
- 1 c sour cream
- 1 T minced chives
- 1 t salt
- 1 t white pepper
- 1 t freshly ground pepper
- 1 t garlic powder
Preparation
Step 1
In a large bowl, combine potatoes and bacon. In another bowl, combine the remaining ingredients; add to potato mixture and toss gently to coat. Transfer to a greased casserole. Bake, uncovered at 325 degrees for 50-60 minutes or until bubbly and lightly browned. Top with chives and serve.
