Chicken satay with peanut sauce

Ingredients

  • 2 lb. boneless chicken breast cut into 16 thin strip
  • 1/2 C coconut milk
  • 1 T fish sauce
  • 1 t curry powder
  • 1 t sugar
  • 1 T chopped fresh cilantro
  • salt & pepper
  • Sauce: 3 T soy sauce, 2 T rice vinegar, 2 T sugar, 1 t grated ginger, 1 T sesame oil, 1/2 C creamy peanut butter, 1/2 C chicken broth

Preparation

Step 1

Whisk first six ingredients. Marinade chicken with sealed bag. Chill for 3 hours. Make sauce in a pan, bring to boil while whisking 2 to 3 minutes. Then with more chicken sauce if desired. Remove from heat, let cool, cover and chill.

Thread chicken onto a metal or bamboo skewer. Grill for 5 to 7 minutes turning once until chicken is cooked through. Serve with sauce.
