Orange Marmalade Chicken

Ingredients

  • 2 chickens -- cut up
  • 6 oz. can frozen orange juice, undiluted
  • 1 package onion soup mix
  • 3 tablespoons honey
  • 3 to 4 tablespoons orange marmalade
  • 1/4 teaspoon ginger
  • 11 oz. can mandarin oranges, drained & reserved

Step 1

Mix together orange juice, soup mix, honey, marmalade, ginger, and half the syrup from the mandarin oranges (save oranges for later). Put sauce mixture in baking dish. Season chicken and place in baking dish. Cover with foil and bake at 400* for 40 minutes. Turn chicken, lower heat, and bake uncovered at 350* for an additional 35 minutes, basting the chicken occasionally with the sauce. During the last 5 minutes, put mandarin oranges on top.
