PICNIC PASTA SALAD (Patti)

Ingredients

  • 2 cups uncooked shell macaroni
  • 1/2 cup canola oil
  • 1/3 cup white vinegar
  • 1/2 cup green onion, finely chopped
  • 2 tsp basil
  • 1 tsp oregano
  • 1 garlic clove, crushed
  • 1/3 cup Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup toasted pine nuts
  • 1/2 red pepper, chopped
  • 1/2 green pepper, chopped
  • 2 tbsp parsley, choppe

Preparation

Step 1

Cook pasta. Mix dressing. Assemble salad (except last 4 ingredients) and refrigerate for 4 hours covered. Before serving, add green pepper, red pepper, parsley and pine nuts.
