Three Grain Chocolate Chip Cookies

Ingredients

  • 1 1/4 cups whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup cooked quinoa
  • 1/2 cup flaxseed meal
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 12 ounce package semi-sweet dark chocolate chips

Preparation

Step 1

Preheat oven to 375 degrees. Cover two cookie sheets with parchment paper.

In a medium bowl, combine flour, oats, quinoa, flaxseed, cinnamon, baking powder & soda and salt.

In a mixing bowl, combine butter and sugars, mix well. Add the eggs, vanilla and honey. Beat thoroughly. Add mixture to dry ingredients until well combined. Finally, add the chocolate chips.

Spoon tablespoons onto cookie sheet and bake for 10 minutes or until the bottom is lightly browned. Cool for 5 minutes and move to wire rack.
