Ingredients

  • 4 Cans Minced Clams
  • 2 Bottles Clam Juice
  • 4 Slices Thick Cut Bacon, cut into 1/4" pieces
  • 1 Lg. Yellow Onion, diced
  • 2 Tbs. Flour
  • 3 Medium Russet Potatoes, peeled and diced
  • 1/2 Cup Dry White Wine
  • 1 Bay Leaf
  • 1 tsp. Fresh Thyme
  • 1 Cup Heavy Cream
  • 2 Tbs. Fresh Parsley, minced
  • Salt & Pepper, to taste

Preparation

Step 1

Heat clams and juice in a saucepan; set aside. In a large pot, fry bacon over medium-low heat until fat renders and bacon crisps. Add onion to the bacon and saute until softened (about 5 minutes). Add flour and stir until lightly colored. Gradually add a little of the clam juice. Whisk in the dry white wine. Add potatoes, bay leaf, and thyme. Simmer until potatoes are tender (about 10 minutes). Add clams, the rest of juice, cream and parsley. Add salt and pepper to taste and bring to a simmer. Remove from heat and serve with crackers or rolls.
