Ingredients
- 1/2 lb green kale, stems removed, finely shredded into small pieces
- 1 tsp salt
- 2 tblsp sugar
- 2 tblsp rice vinegar
- 1 tblsp sambal chile paste
- 2 tblsp oyster sauce
- 3 tblsp mince dgarlic
- 3 tblsp sesame seed oil
- zest of 1 lemon
- 1 lb ground pork
- 1/2 cup finely grated parmesan cheese
- Pinch of salt and white pepper
Preparation
Step 1
Place the kale in a large bowl. In a small bowl, combine the sale, sugar, vinegar, sambal, oyster sauce, garlic, sesame oil and lemon zest. mix well and then combine with the shredded kale. Toss to coat and allow the kale to marinate, covered, at room temperature for 1 hour to soften.
Add the ground pork and parmesan cheese. Mix the filling well. Season to taste with salt and pepper. Refrigerate until needed.
Stuff and fold dumplings and place in a steamer basket lined with punched parchment or wax paper, or blanched cabbage leaves. Cover and steam for 8 minutes. Serve with the dipping sauce of your choice.
