Ingredients
- 2 tbsp Butter
- 3 cloves Garlic, chopped
- 1 large Yellow Onion
- 1-2 lb chicken breast, cut into pieces
- 3 cans Great Northern White Beans
- 2 cans Cannellini beans
- 1 can White corn
- 36 oz Chicken Stock
- 2 cans of chopped Green Chilies
- 2 tsp Cumin
- 2 tsp Oregano
- 2 tsp Sea Salt
- 1/2 tsp Pepper
- 1/2 tsp Cayenne Pepper (more if desired)
- 1 cup Heavy Whipping Cream
- Sour Cream
- Cheese, shredded
- Salsa
Preparation
Step 1
Chop Onion and Chicken and saute in Butter with Garlic (large pot, medium heat).
Drain and rinse Beans, then add Beans, Corn, Chicken Stock, Chilies and spices to pot.
Simmer for 30 minutes, or for a couple of hours, depending on time you need it.
Remove from heat and add Heavy Cream. Serve with Sour Cream, Cheese and Salsa.
