Peanut Noodles

Ingredients

  • 8 oz. spaghetti
  • 2 Tbsp. sesame oil
  • 1 bunch green onions, sliced (white parts only)
  • 1 tea. minced fresh ginger
  • 1/3 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup hot water
  • 1 Tbsp. cider vinegar
  • 1 tea. sugar
  • 1/4 tea. red pepper flakes

Preparation

Step 1

Cook spaghetti in a large pot of boiling water until al dente. Drain.

Meanwhile, in a small skillet, heat oil over low heat, then cook onions, stirring, until tender. Add ginger; cook, stirring for 1-2 minutes. Increase heat to medium-low; mix in peanut butter, soy sauce, water, vinegar, sugar, and pepper flakes. remove form heat.

Toss spaghetti with sauce.
