Raffaella's Apple Cake - {Torta Di Mele Alla Raffaella}

  • 3 tablespoons toasted bread crumbs
  • 2 Golden Delicious apples peeled, and thinly sliced
  • 1/4 cup fresh lemon juice
  • 2 large eggs room temperature
  • 3/4 cup sugar
  • 6 tablespoons unsalted butter melted
  • 1/2 cup cold milk
  • 1 tablespoon vanilla
  • 2 cups unbleached all-purpose flour
  • 1 1/4 tablespoons baking powder

Step 1

Preheat the oven to 350 degrees. Butter a 9-inch round cake pan and coat it with the bread crumbs. Refrigerate.

Place the apples in a bowl, pour the lemon juice over them, and toss to coat. Set aside.

In a large bowl, with an electric mixer, beat the eggs with the sugar until light-colored. Beat in the butter. Beat in the milk and then the vanilla.

Sift the flour and the baking powder together. Add to the egg mixture a little at a time, beating well after each addition. Fold in the apples. Spoon the batter into the pan.

Bake for about 45 minutes, or until the cake is firm to the touch and nicely browned on top and a cake tester inserted in the center comes out clean. Cool the cake in the pan on a rack. Turn out onto a plate and cut into wedges to serve.

This recipe yields 6 to 8 servings.
