Thai Chicken Sandwich

Ingredients

  • 1 c chopped cucumber
  • 1 small carrot, grated
  • 1 scallion, thinly sliced
  • 2 T chopped fresh mint
  • Juice of 1/2 lime
  • 1 t sesame oil
  • Pinch of salt
  • 1/2 c Sweet and sour Peanut Sauce
  • 4 whole wheat pitas
  • 2 c shredded cooked chicken

Preparation

Step 1

Toss together cucumber, carrot, scallion, mint, lime juice, sesame oil, and a pinch of salt. Spread peanut sauce inside the pitas and fill them with an equal amount of the chicken and the cucumber mixture.
