Corn & Black Bean Salsa

  • 2 cups corn kernels (about 4 ears)
  • 1/4 cup olive oil (divided)
  • 1/2 cup diced red onion
  • 1 cup diced red bell pepper
  • 1/2 cup chopped cilantro
  • 6 tbs fresh lime juice
  • 2 15 oz cans black beans (rinsed and drained...soak in water overnight for softer beans)
  • Kosher Salt
  • Black Pepper
  • Tortilla Chips



Step 1

Preheat broiler - toss corn in 2 tbs olive oil

place on an aluminum foil lined baking sheet - broil 8 inches away from heat for about 5 minutes or until golden brown and tender.

toss together red onion, red pepper, cilantro, lime juice, 2 cups black beans, corn and remaining olive oil in large bowl. Season to taste with Kosher salt and pepper. Refrigerate.

Serve with Tortilla Chips
