Appetizer: Toasted Creamy Couscous

Ingredients

  • 1 cup israeli couscous
  • 1 tbsp. butter
  • 1 tbsp. olive oil
  • 2 cups chicken broth
  • 1/2 cup half and half
  • 1/3 cup shredded pecorino romano
  • crab
  • asparagus
  • mushrooms
  • egg
  • lemon zest

Preparation

Step 1

Toss mushrooms and asparagus in olive oil. Season with salt and pepper and roast in 450 degree oven for 10-15 minutes.

Poach egg.

Toast couscous and butter in pan on medium-high heat until browned. Season with salt and pepper. Add chicken broth. Bring to boil. Cook for 10 minutes. Add half and half slowly. Add cheese. Add crab and roasted veggies. Stir, cook for 5 minutes. add veggies and lemon zest. Top with poached egg.

Mix egg before eating.
