Spaghetti w/ Browned Butter & Mizithtra Cheese (Old Spag. Factory)

  • 1/2 lb. (2 sticks) butter
  • 12 oz. spaghetti, cooked
  • 1 cup shredded Mizithra cheese
  • salt and pepper

Preparation

Step 1

Melt the butter in a small pan over medium heat and bring to an easy boil. The solids, which will initially appear as the foam on top, will sink to the bottom of the saucepan and begin to brown. The boiling evaporates the water, so you are left with the toasted solids and the butter oil. This should take 5-10 minutes. Re3move from the heat and set aside.

To sere,toss the hot pasta with the browned butter and the Mizithra cheese. Season with salt and pepper.
