Directions

1) Prepare dough through the first rise. 2) Preheat oven the 450 degrees F. Lightly grease a baking sheet and sprinkle with corn meal. Divide the dough in half and form each half into a ball. Place on a lightly floured work surface, sprinkle with flour and cover with a dish towel or plastic wrap. Let stand for 20 mins. Meanwhile, prepare fillings. 3) Shape each ball of dough into a thick disk and let stand for about 5 mins. Roll each one into a 10" round. Divide the filling among the rounds. Fold the dough over, making a half circle and tightly seal the edges with your fingertips. Brush top with egg wash if desired. Reduce the oven temperature to 400 degrees F. Place the calzones on the baking sheet and bake until nicely browned, 30 to 35 mins. Serve hot or at room temperature,
