Merry Christmas Fruitcake
- 7 cups firmly packed chopped mixed dried fruits (prunes, apricots, figs, peaches, apples)
- 1 cup raisins
- 2 cups coarsely chopped pecans or walnuts
- 1 1/2 cups fruit juice or brandy
- 1 cup butter
- 1 1/2 cups firmly packed brown sugar
- 4 eggs
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon ginger
In a large bowl mix chopped fruits, raisins, nuts, brandy. Cover with foil and let soak overnight.
line a greased tube pan with foil. First cover the bottom and then line sides.
In a bowl beat butter until fluffy and stir in brown sugar. Beat in eggs, one at a time. Stir in flour, spices and baking soda. Stir in soaked fruit and then pour into prepared pan and cover with foil and bake in 275 degree oven for 4 hours and thn remove voil and bake at 325 degrees for 30 minutes or until brown.
cool cake in pan and then unmold. Wrap cake in heavy foil and store in cool dry place for 2 weeks before serving.
