  • 2 thin slices of prosciutto
  • 1 tablespoon olive oil
  • Zest of one lemon
  • 2 tablespoons chopped Italian parsley
  • Your favorite rustic bread
  • Rouille

Preparation

Step 1

Heat the olive oil in a medium sauté pan. Add prosciutto slices when hot. The prosciutto will seize up (don’t worry!).

When prosciutto is lightly browned, turn over and sauté for 15 seconds. Remove prosciutto and place on paper towels. Once cooled, the prosciutto will be crispy. Crush with your hands into a small bowl. Mix with lemon zest and parsley.
