Ingredients
- 1 Lrg sweet onion
- 2 Tbsp flour
- 1 cup saltine cracker crumbs
- 1/2 tsp salt
- veg. oil
Preparation
Step 1
Peel onion, leaving rood end intact. Cut onion vertically into quarters, cutting to withing 1/2" of root end. Cut each quarter vertically into thirds. Place onion in boiling water for 1 minute, remove and place in ice water 5 minutes. Loosen petals if needed. Drain onion, cut side down. Place flour in zip plastic bag, add onion, shaking to coat. Dip onion in egg. Place cracker crumbs in bag, add onion, tossingn to coat, chill 1 hr. Pour oil to 3" depth in fry pan. heat to 375. Fry onion until golden brown (5-7 min). Drain on paper towels. Sprinkle with salt. Serve onion with oney mustard or ranch dressing.
