Ceviche Salsa

Ingredients

  • 2 tomatoes, chopped
  • 1 cup grilled corn
  • 1/2 can hearts of palm, diced
  • 1 jalapeno pepper, diced
  • 1/2 red onion, diced
  • 1 small cucumber, diced
  • 1 avocado, diced
  • 1/2 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 2 teaspoons cumin
  • 1 clove chopped garlic

Preparation

Step 1

Combine the tomatoes, corn, hearts of palm, jalapeño, onion and cucumber. Add the avocado and cilantro, stirring gently.

In a separate bowl, combine the lime juice, cumin and garlic. Add to other ingredients and mix well. Serve with chips.
